Peanut Butter Cupcakes with Peanut Butter Frosting

Cake:

1 ½ cups flour

2 ½ teaspoons baking powder

¼ teaspoon salt

2 eggs

2/3 cups sugar

¾ cups unsalted butter, soft, no chunks

2 teaspoons vanilla

½ cup milk

2/3 cup peanut butter

  • Preheat oven to 350F
  • Line muffin tin with cupcake liners
  • Whisk the flour, baking powder, and salt together in a medium bowl
  • Add eggs and sugar and beat with electric mixer until evenly combined.  While beating, gradually add the butter and then the vanilla
  • Add the peanut butter and then, while beating slowly, and the milk

Bake for 22 minutes / Makes 12 cupcakes

Frosting:

½ cup butter

1 cup peanut butter

4 cups confectioner’s sugar

1/3 cup milk

  • Cream the butter, peanut butter, salt and vanilla.
  • Slowly add the confectioner’s sugar, 1 cup at a time, alternating with the milk until you reach the desired consistency
